Overall - 'Cuisine & Service'
The Ultimate Award:
Seven Stars and Stripes®
The 'less is more' philosophy that places greater emphasis on underlying shape and structure is wonderfully apparent in the Minimalist Style of the first rate ADA Restaurant in the Hotel Hoffmeister in Prague, Czech Republic. On the contrary, Chef de Cuisine Monsieur Martial Clément's opulent creations add the necessary depth to satisfy the affluent demands of people seeking gastronomic perfection.
Bursting on the international scene in 1983 after becoming a finalist in the 'Best Young Cooks of France Competition', Mr. Clement proceeded to make a name for himself working in Versailles, Paris and London. Chef Clement overcame the pressures of maintaining and nurturing the prestigious Michelin stars at his restaurants while being voted Best Chef of Eastern & Central Europe between 1998 and 2000.
Hard work and discipline brought Chef Clement to Prague as Head Chef at the French Embassy, no doubt a dauntless assignment in which Chef Clement was at the top of his game.

At times Chef Clement was influenced by the specialties of French cuisine and at times it was he who influenced the world of cookery with his innovative manipulation of traditional methods.

Our Seven Stars and Stripes™ preferred menu was prepared for us under the close guidance of Chef Clement and his capable crew and emphasized creativity with seemingly endless varieties of fresh local produce, seafood and fowl.

Many creations were accented with interesting ingredients including fresh coriander, wild mushrooms and truffles while ocean fresh selections of sea bass, wild salmon, red tuna and turbot were prepared and served with fortified stock reductions, which take hours to get ready. Flavor is not an issue in these labor intensive carefully squired methods of cooking, for it is rich and lavish while not overpowering the items with which it coexists acting in a supporting role to accentuate the subtle taste elements.

Our extremely delightful dining experience can be counted along with the thousands of other satisfied patrons of the ADA Restaurant and will live on for many years to come. Each of us was very pleased with the cuisine quality, presentation and the service. We sat by the window and our waiter Radek needs to be recognized as the person who guided us knowledgeable and with great patience through the menu. He was extremely attentive and very courteous. The inspiring wine menu featured foremost Czech wines and a few carefully selected international 'musts'. Every employee we encountered during our dining event, from the water boy to the connoisseur was pleasant and polite. Our food was excellent and so was the dessert. The restaurant itself is sheer beautiful and well kept.
